One&Only Palmilla is proud to announce the highly anticipated opening of Hoshi, an intimate 28-seat omakase dining experience nestled within the resort´s historic bell tower. Hoshi seamlessly merges traditional Japanese sensibility with modern culinary techniques, offering guests a unique journey through the rich culture of Japanese cuisine. Translating to “star” in Japanese, Hoshi´s celestial aesthetic is inspired by an ancient love story of the stars Vega, the Weaving Princess, and Kengyuu, her beloved from across the Milky Way.

Helmed by Chef Hiroki Arai (Left), Hoshi promises a seasonally driven, omakase-style dining experience. Omakase, meaning "I'll leave it up to you" in Japanese, invites guests to place complete trust in the chef as they prepares a multi-course tasting menu showcasing the freshest selection of local seafood, alongside premium imports from Japan. The opening menu, with three multi-course options, features sushi, sashimi, tempura, and robata dishes including Scallop Tartar topped with roe and tamanegi; Baja Chocolata Clam with yuzu kosho; and A5 Wagyu Robata with matcha salt, togarashi salt and shiso ponzu. "Japanese cuisine is renowned for its minimalist approach, where dishes are prepared with few ingredients to highlight their natural flavors. This simplicity allows the true essence of each ingredient to shine through, creating harmonious and balanced flavors,” notes Chef Arai. “Our culinary philosophy centers around the essence of taste, rather than the decoration.”

An extension of its culinary values, Hoshi´s minimalist design is rooted in the Japanese principles of Shibui–simple, subtle and unobtrusive beauty. Guests are greeted with an ethereal sound and light emanating from the historic bell tower, an homage to the legend of Hoshi and the rich history of Palmilla. Inside, the restaurant features two sleek omakase counters and an intimate sake bar enveloped in subtle textures and neutral tones. Accentuating the restaurant´s Sea of Cortez views, atmospheric pendant lamps create a unique ambiance with an undulating light that emulates moving reflections. “We are delighted to showcase the magic of Hoshi to our guests and the Los Cabos community,” says Sergio Pereira, One&Only Regional Managing Director, Americas. “This restaurant is a culmination of our culinary team´s passion and a genuine excitement to bring the Hoshi experience to its flagship location in North America.”

With its opening at One&Only Palmilla, Hoshi marks its first venture outside of Asia, presenting a unique opportunity for guests to immerse themselves in an authentic Japanese culinary experience amidst the stunning backdrop of Los Cabos. Signature dishes from sister restaurants at One&Only Desaru Coast, Malaysia and One&Only Reethi Rah, The Maldives, will also be featured on the opening menu.
